We use only the more expensive end grain construction method for building this premier butcher block.  End grain is where the wood is cut in small pieces and stood on end and glued together.  Cutting into end grain enables the wood fibers to separate when the knife cuts into the wood because the wood separates instead of chipping when cutting you food.
